Often when planning a menu we try and find inspiration from the things we love. We have always celebrated global flavors and our different heritage and backgrounds at Southport and Irving. Last spring when working on the Spring/Summer menu we looked at 20,000 Leagues Under the Sea by Jules Verne. The project was fun however the timing wasn't right and the idea got shelved. At the end of summer we were digging through our books for ideas to start conceptualizing the fall menu. A illustrated kids version of Around the World in Eighty Days was hidden between the bar books. After opening it, I knew that was going to be the inspiration behind the new menu.
Each cocktail represents a major stop in the book. Flavors portrayals are either a direct reference to the location, historical context or a chapter of the book. When possible the presentations are whimsical and interactive with the guests.
Staying true to the book we have a "Passport" you can get stamped for each drink you try one of our cocktails. We are in the process of barrel-aging a surprise drink that will be the "twenty thousand pound wager." If you get all 8 stamps before December 21 for a complimentary £20,000 Wager Cocktail.
